Thanks Erin. I use a Canon 5D, so it is a particularly good camera and works well in low light. On the stargazing shot, I used a really slow shutter speed of 1/3 of a second and had the ISO setting at 6400. It would have worked much better if I had used a tripod, but I didn't have one with me. I tried it a few times using different speeds, but they were all pretty slow, so as to let as much light as possible in but not look too shaky. Also, even though it was dark, there were street lights, so there was some light around, so that helped me out. The problem with using such a high ISO though is that the photo is quite grainy. Finally, as she was lying down, she was able to keep quite still which helped as well. I hope that helps, let me know if you have any other questions :)
